In the case of Between Five Bells, we use a tiny corner of the wonderful Lethbridge winery in Geelong, Victoria. Lethbridge was built by Ray Nadeson and his family in 1997. It’s a straw-bale barn with great thermal properties and all the idiosyncrasies you’d expect from a building built by a research scientists turned winemaker.
