Overstone produces fine wine from the major wine producing regions - Hawke's Bay and Marlborough. In Hawke's Bay the vineyard sites are on river gravel silts with slightly different climatic characteristics suited to different grape varieties and wine styles.
The warm, free draining vineyards around the winery are planted on the gravel deposits of an old river valley and provide the Merlot based red wines. Further inland, on a dry river gravel terrace 100 metres higher in altitude, the cooler vineyard site produces Pinot Noir, Chardonnay and Sauvignon Blanc grapes.
