We produce limited quantities of Super Premium Shiraz from six of Australia’s premium shiraz producing regions. Each wine is made by a winemaker in that region, a winemaker who has demonstrated the ability to produce outstanding wine. There are no commercial restraints placed on our winemakers in the production of the wine. The brief is simple, buy the best fruit you can and use new oak of your choice. Palmarium (Latin for outstanding), is the name of our virtual winery and Exemplar (Latin for original), is the name we have given to our Super Premium Shiraz. The quantity of wine produced with each winemaker is limited to 10 tons of fruit which produces around 650 dozen bottles.
